how much can we expect to get done in one day? would like to see Akko, b'hai gardens (view only, not tour) and given that this is one day trip, what else do you suggest we see? Caesaria? Rosh Hanikra? (sorry if i've misspelled). Druse Village? Could you suggest a good place for a fairly quick lunch? (we've read about Uri Buri, but it might take take too long?). our visit is at the end of April. thanks.

It depends entirely on how long you spend in each place. The driving distances are not long. Jerusalem to Akko is only a couple of hours drive altogether. I was once stationed in that area and realizing that the country has changed, I always found Akko interesting around the port and fortress area. Ceasaria for the antiquities. My favorite though was Safed which is still a pretty and historic town in the Galilee, an easy and scenic drive from Akko. If you are Christian, you will want to see Nazereth which is also convenient to the general area.
From Jerusalem to Haifa it takes a net driving of about 2-2.5 hours. However, there will be traffic issues exiting Jerusalem and again in the roads that are relatively near Tel Aviv. I suggest you either exit Jerusalem very early like even before 06:00 AM or if possible do the tour in Haifa and Akko while staying there or at least in Tel Aviv.
Caesarea and Rosh Hanikra are defiantly places that you need to see.
You can plan your day like this:
Drives via the coastal highway to Caesarea, than continue to Acre, from there continue to Rosh Hanikra. After that start going back and stop in Haifa.
Like I wrote before, to do this you have to exit no later than 06:00 AM.

Seems like you're trying to squeeze too much into a single day; just my personal opinion.
Incidentally if you are in Akko, there are some nice small Arab restaurants where one can have a quick Mid Eastern luncheon.
