Planning for Tunisia - comments please

In just eleven days I leave on a six month RTW. It's mostly Asia, but I'll be spending eleven fulls days in Tunisia near the end. Comments on my tentative itinerary are welcome, along with hotel and restaurant recommendations - note that I've left the far south out deliberately - a couple of things looked interesting, but I don't want desert and camels on this trip.

Background info: I'm early 60s, solo female. I'm not really into big cities, neon, nightlife or shopping - although I love markets. I also love mountains, waterfalls and rocky coastline, and I'm interested in architecture, religion and especially food. I prefer crafts - glass, textiles, ceramics, jewelry - to fine arts. I travel more on the budget end and use public transport.
