We are going to be hiking in Galilee, starting and ending in Nazareth. We would prefer to have our backpacks transported from one town to the other so we do not have to carry them. Any ideas on how to arrange this? The cost? How expensive are taxis in this part of Israel?

Taxi fares are the same everywhere in Israel and are regulated by the MoT.
In the cities, you should always request that the driver use the meter. Don't listen to any excuses : the law says that he must turn on the meter if you request it. Fares are not expensive. I took a taxi the other day from one side of Haifa to the other for 55 NIS (about $14).
For intercity travel, the MoT has published a list of FIXED prices (don't use the meter!) based on distance. Some examples: Tiberias - Nazareth = 138 NIS, Carmiel - Akko = 111 NIS, Safed - Kiryat Shmona = 182 NIS.
Add 20% for nights and Saturdays and about 4 NIS for each piece of large luggage.
To arrange it you would have to make sure that your hostel/hotel would be willing to receive your backpacks.
We needed a taxi to bring our luggage four times, and the places we stayed were able to arrange it every time. We were hiking outside Nazareth in mostly undeveloped areas, so the taxis did not have meters. The drivers were all know to the hotels.
Glad to hear that it worked out. All LICENCED taxi drivers in Israel have meters, even in "undeveloped areas" (whatever that is). Apparently the "taxis" you used were people with cars making a little money on the side.
