We'll be flying Delta out of Seattle and change planes in AMS with final destination at Barcelona (BCN). We have one hour between flights at AMS and I was wondering if that is suficient time to be processed through the passport process (I assuming we'll have to go through the passport check)? Thank you.

It is a bit tight, but certainly doable. Don't dawdle as the walks can be a bit long.
When you get to the passport control area look for the line labeled "short connections" or similar. There is usually someone there checking boarding passes. This will enable you to cut the line.
All in all, this is doable and not something to be overly concerned with, but you will need to keep your eyes open and keep moving.

What decides it (imo) is if your inbound flight lands on time. If you really have 1 hour you have a chance. But if there is any delay with landing or deplaning so you're late into the terminal, you have no cushion. I wouldn't do it myself.
