We are US citizens and will be flying from Copenhagen to Dublin on May 12. We arrive in Dublin at 9:25 AM via SAS. We would like to take a Delta flight out to the US at 11:20 AM. SAS flies into Terminal 1 and Delta flies out of Terminal 2. Will that give us enough time to make the Delta flight.

Since apparently you are booking these separately I wouldn't risk it. DUB is an easy airport, but you will be doing US Customs and Immigration/Passport control there.
Will SAS check you baggage straight through to your destination? If you have to wait to retrieve your bags and then check them back in, two hours could be tight. Also, Delta wants you in the departure lounge well before scheduled departure time and has been known to lock the doors in advance (I speak from regrettable experience....)
