We are going to Hong Kong for our first time on a business trip but want to extend our stay for 7 vacation days. Not sure we will be back anytime soon and want to maximize our visit.
We are asking for advice as to just focusing on Hong Kong or visit other sites also (Great Wall, etc) Need to depart from Hong Kong

If it was me - and it isn't - I'd spend the whole time in Hong Kong with an overnight side trip to Macau. There is plenty to do and see and keep you interested.
If you want to go into mainland China, that will require an expensive visa (about US$160) you must get in advance. If you want to fly to Beijing to see the Great Wall, Summer Palace and the many other historic attractions, you will need to get your visa before you go. If you opt to do that, you would probably want to spend at least 5 days in Beijing.
If you are from the US, UK, EU, etc you do not need a visa to enter Hong Kong or Macau.
For some people, 7 days would a long time for a 1st visit to Hong Kong (though I'd find it fine). But you certainly could split the time between HK and somewhere on the mainland, if you like.
You do need a Chinese visa, and as stated it isn't cheap. However, unless things have changed dramatically, you can get that visa in 1 day in Hong Kong. Hotel concierges were able to arrange it for you at one time; I don't know if that's still the case.
Plenty to do in and around HK for seven days
