There is a lot of unique stuff in Newfoundland, a month will be filled quite quickly. Enjoy your trip
Don't leave out St. John's just because of the dog, though I do absolutley agree that the west coast (i.e L'Anse aux Meadows and Gros Morne) seem like natural with a large dog. There is a welath of city sites that would be dog friendly, Pippy Park, just one and lots of city waling trails.
There is a well-developed East Coast Hiking Trail on the Avalon Peninsula as well as Cape Spear and, en route from west to east, the beauties of Terra Nova National Park. Much to see with a whole month at your disposal!
Fogo Island
Ferryland archealogical site and picnic on the cliffs at the lighthouse nearby.
Bay Bulls whale and puffin tour.
