you can walk the beach to all sorts or rests/bars.
Have you considered Puerto Rico? I know you mentioned all inclusive which you won't really find especially in San Juan. However, you will find beaches with other single people in Condado and Isla Verde and lots of fun bars and restaurants in those places as well as in Old San Juan.
