Hi there! Just looking for a bit of assistance.. My husband and I are planning a trip this upcoming January for his 30th birthday. We would like to go somewhere in the Carribean/DR/Mexico. Our budget (without airfare) is about $2500-$3000 for five nights. Here are our requirements:
-all inclusive
-beautiful beaches
-prefer adults only
-something easily accessible from Miami
-great food (or you know, on the good side of all-inclusive)
-nothing super commercial (i.e. Sandals)
-would love the option to have an ocean view
So far we've looked at Playa del Carmen, Punta Cana, St Lucia, Barbados, Curacao, St Maarten, Cayman Islands... but can't seem to find any way to narrow it down. Any suggestions would be extremely appreciated!!! Thank you!

Live Aqua in Cancun. Trust me. I didn't think I'd like Cancun, but this hotel changed my mind. I think it's one of the best we have ever stayed at in many years of traveling all over the world. And the food is more than half-way decent.
In the Playa del Carmen area:

You won't find traditional adults only AI resorts in Barbados St. Maarten, Grand Cayman or Curacao. There is Almond in Barbados, but it can not compare to the resorts in Mexico.
In St. Lucia there are 3 Sandals resorts. Others to look at:
The Jalousie Plantation, Sugar Beach
The Jade
Coconut Bay Beach. One side of the resort is adults only, the other side is family friendly.
Not that familar with the DR as I don't like but look at:
Excellance
Barcelo Bravo
Secrets
The Majestic - I think one side of the resort is adults only.
Read the reviews on the DR carefully. Many people like it, but there are far more complaints regarding the food than there are good reviews.
Have you considered Jamaica? One of the best AI resorts we've stay at next to the Royal Playa del Carmen is the Jewell Dunn's River in Ocho Rios.
The Couples resorts get good reviews also. Sunset at the Palms in Negril is good to. Not strictly adults only, but the discourage kids. It's also across the street from the beach, but no big deal.
The Secrets and Iberostar in Montego Bay get good reviews also. If you are not a total snob.

Funny you should mention the Jewell Dunn's River, KVR, that's actually the only all-inclusive place I've been, when it was a Sandals. Which is why I said "No Sandals Resorts", just because I want to try something new! Not a TOTAL snob.
I was glad we went after they changed hands from Sandals to the Jewell. I've been to two other Sandals and was not that impressed. The Jewell was so much better.
I was reading reviews on TA about the resorts in Montego Bay. That's what I meant about the snob comment. Couldn't believe what some people wrote. LOL
