There's not a whole lot to do, but if you want to shop, Ron Jon's Surf Shop is not far. It is huge, pretty famous and has lots of swimwear for your cruise
I certainly wouldn't bother with the theme parks ... not enough time. But the Kennedy Space Center is great. Otherwise, it's just hanging around Cocoa Beach.

We visited the beach for a day a few years ago, and were STARVING after a day in the sun. The rooftop restaurant had wonderful views, and the food was great. (Though it may have been a case of being so hungry that anything would have tasted good!)
