Shore excursions and ship tips on NCL Panama Canal cruise

I'm taking my first-ever Panama Canal cruise next month from Miami to LA on NCL's Norwegian Star. I would greatly appreciate the following from my fellow Fodorites:

1) Any suggestions on best restaurants, spa treatments, spa staff, entertainment etc. on the Star? Especially interested in Cagney for 50th birthday dinner!
2) Any suggested shore excursions in Cartagena, Huatulco, Acapulco, Cabo or Puntarenas?
