They are a bit far apart for 7 days. You may hit both on a 10 or 14 day "exotic caribbean" and you have to look hard to find it as St Lucia is a popular stop (for South Caribbean crusies, usually out of San Juan, meaning expensive air fare) but Roatan is not a popular stop for the mass market lines, at least until now.
Princess is doing a 7 day western Caribbean 09 with a stop at Roatan. It's a new stop for them, replacing Ocho Rios.
All cruise lines have buffets, most are almost 24/7.
History, culture and exological adventures should not be hard to find. Planning the trip is half the fun. Good luck!

Where does the Princess 7 day western Carib with stops in Roatan dock from?
My sister saw a House Hunter show on Roatan, now she wants to go. Have you been there?
Celebrity doesn't have buffets. Princess and Holland America should be good choices for you.
what about Royal Caribbean??
