Museums not much of an issue, though there is an excellent small(tiny?) museum dealing with the 1990's war. As you stand on the walls and look at the nice new roofs, it is well to remember that they had to be replaces because the old ones were destroyed by shelling in the 1990's.
You don't say how long you will be there, but a trip to Cavtat, especially by boat, is nice. Go up, have lunch -- a long lunch -- and return to Dubrovnik.
A day trip to Kotor in Montenegro -- your hotel can book one -- is an interesting experience, and the scenery is spectacular.
Peljesac peninsula meets your description (scenery). I have not been to Cavtat, but it's just a neighboring town, right?
I agree that a trip to Kotor (Montenegro) would be a good choice. The scenery is pretty and the town charming.

I am confused--are these shore excursions, or are you staying in Dubrovnik a few days?
