I'm helping my son find a hotel for 3 nights in Edinburgh in April. He will be traveling with his girlfriend who is studying abroad in the Netherlands. They are looking in Old or New Town near the Royal Mile and their budget is around $125 (American) per night. He is considering the Grassmarket Hotel, Roxburghe Hotel and Parliament House Hotel but is open to other suggestions.

I'd look at the Apex City Hotel (there is another Apex hotel in Old Town and one in Waterloo Place but this one usually has the lowest rates)
Rates are very date dependent - one night might be £70/$105 and the next £120/$180 so he'd have to plug in their specific dates. I'd actually try all three Apex (City, International, Waterloo Pl.) maybe one is running specials during their stay.
Try this, and adjust the dates accordingly. You can set the $ parameters, location, etc.... Make sure you look at the reviews.

Once you find one or three hotels, go directly to the hotel website.
Also, try looking at B&Bs.
Hi KathyK,

7 Eyre Place, Edinburgh
I have stayed here three times and like it. The hosts are friendly, breakfast is filling, and a lot of bus stops are all around, though it's also an easy walk to the Royal Mile.
The online booking system was linked to the web site for my trip last April, but I think calling for a rate on the phone gave me the better deal.
We stayed at 14 Hart B&B - its name is its address- in New Town and about a 10-15 minute walk to the Royal Mile. The hosts are teachers, one a teacher of English History, and have a wealth of knowledge about the city. The B&B is lovely as are the rooms. Breakfast was excellent and varied. We would return there without hesitation. The power shower was marvelous and the price is at about your price range, particularly when you consider breakfast is included. A nice touch is the decanter of Scotch in each room, also included in the rate.
