London/Scotland itinerary help - 10 days

We will be traveling to London and Scotland for 11 days in August. I am an older mother traveling with my 19 year old son. We visited London about 10 years ago but have never been to Scotland. We plan on flying into London for a few days and then take a train to Scotland. We will only be traveling by train (no car rental) or perhaps find day tours in Scotland. We will be returning back to the U.S. from Scotland.
Not sure where to start with our itinerary planning. Any help would be greatly appreciated. We like architecture, sightseeing, short walks, and my son will want to visit a distillery or brewery.
