I am traveling with my mom and sister. Mom is 77, and not very active, so anything beyond short walks is out (no hiking). Wondering if we are better to base ourselves out of Reykjavik for the entire time, and do day trips (we'd rent an apartment), or whether we should spend the first 2 nights there, then do a 4 day private tour.

1 week is an interesting timeframe... it's too long to spend the whole time in Reykjavik, in my opnion, and too long to travel the whole ring road.
My initial thought would be to take the short flight to Myvatn, spend a couple of days exploring that area (go to the baths... much more interesting than Blue Lagoon in my opinion). Then drive back towards Reykjavik, spending a day (and maybe a night) on the Snaefellsnes peninsula.
Once back in Reykjavik, you can spend the last few days exploring the city, Golden Circle, Blue Lagoon, etc.
