We will be spending 12 days in Sicily in early April and have an 8:30 AM flight to Munich on April 18. I have read that it takes about an hour to get from Palermo to the airport, Since we need to be at the airport by 6:30 AM, and we don't want to be up at 4:30 AM and be dead tired in Munich (we only have 24 hours there), I was hoping to find a decent hotel near PMO airport. Any suggestions? If not, what is the fastest way to the airport from Palermo?

a - You do not need to be at the airport by 6:30am.
b - Early in the morning, it will not take long for a taxi to reach the airport.
Stay in Palermo, enjoy yourselves, order a taxi for 6:30 or thereabouts.
That's my opinion anyway.
I agree with Tarquin above. We had a similar flight schedule last April. Here is what we did:
Checked in online for flights the evening before and ordered a taxi to pick us up at 6:30 the next morning. Had a nice evening in Palermo, returning to the hotel about 10:00. Requested a wake-up call for 6:15 the next morning, set our (phone) alarms for 6:15 as backup, then packed up before turning in for the night. Woke as scheduled at 6:15, threw water on faces, nightclothes into bags, quick once over with toothbrushes and hairbrushes, then downstairs to meet taxi at 6:30. Quick trip to the airport, arriving just before 7:00. Plenty of time for a coffee at the airport.
We travel carry-on only, no need to check luggage. Suggest you do the same if you can - makes early morning departures simple and quick.
