What are some picturesque/charming ski villages in Europe (a la Aspen, Park City, Breckenridge) that aren't really difficult to get to from Amsterdam (by train or plane). We're looking for someplace that both a snowboarder and a couple of non-skiers would enjoy for a weekend.

I'm no expert but I think you aren't going to get good ski resorts until you go to southern Germany/Austria or Switzerland from that location. Or France, of course, I just think the resorts in southern Germany or northern Austria may be the closest. I don't know if any place is feasible by train from Amsterdam within a reasonable time frame or without a lot of transfers (both). If so, others will likely know.
I've only been to Verbier in Switzerland it is a good skiing and snowboarding, and a cute enough town with enough to do for a weekend. But it may not be easy enough for you to get to, I was staying in Montreux for a while and took public transportation there for a weekend (bus to Le Chable and then gondola up), but all of that will take a while. Of course you can drive, but not sure I'd want to worry about that in winter. So I'm sure you could fly into Geneva and do all that somehow but would take a while. Off the top of my head, Kitzbuhel in Austria is known for being a popular, "quaint" ski resort place known for its style. It is not that far a drive from either Salzburg or Munich airports. YOu can get a nonstop flight to Salzburg from Amsterdam on budget airline Transavia. http://www.kitzbuehel.com/en
I don't think the snowboarding there would be quite as good as Verbier, but there is some.
Chamonix might be a possibility--fly to Geneva and take a bus to Chamonix,
