I will be visiting Italy in the beginning of May. Our trip begins in Venice and I would like to take some day trips to Vicenza and Padua. Should I purchase the tickets now or wait until i get to Italy? The prices seem less expensive for the fastest routes.

The R trains from Venice to Vicenza are 5€. Most only take 15-30 minutes longer than the fast trains (16€). Venice/Padova - some of the R trains take 33 minutes (3.55€) while the fast trains take 25 minutes (15€).
You can find some 9€ super economy tickets on the faster trains if you buy in advance, but I wouldn't worry about it since the time difference between the slow R trains and the fast trains is so little and R trains are so cheap (and frequent on these routes).
One only buys in advance if one is absolutely certain that they will be able to make that train.
On holiday, I'm never certain about specifics, so I will wait. Never can tell what I might find in Venice to keep me occupied.
Also note, there is no discount for buying R tickets in advance.
