I haven't volunteered in México but when I've volunteered in other Latin American countries (Honduras and Guatemala) I've learned about the options from Spanish school websites. If you're already fluent in Spanish you wouldn't need classes but could use the websites as resources for local volunteer options. If you aren't fluent, studying part of the day and volunteering the rest is a great way to go (and fairly addictive imo). You can search for school websites here:

If nothing else you can contribute school supplies, Pay for a child's schooling or even walk dogs for the local Humane Society.
A friend of mine who's an Episcopalian priest has gone to Mexico several times to work with Habitat for Humanity. Students from a local Catholic university (Go, Zags!) have gone with her.
I don't have any more information about this type of thing, but I would assume you could access the Habitat website and see if they have any ideas.
