We would love advice on which one to visit in Oct or Nov. I hear food is very expensive in St Thomas but is it also in Aruba? Which has best snorkeling or scuba diving? I would love a nice beach but also hiking and seeing nice natural sights.

Then try St. Martin (the French side), or my favorite, St. Barths.
St. Thomas is such a tourist trap with all the cruise ships there every day.
St. Barths' harbor won't fit a cruise ship. Being in the shadow season, lodging should be very inexpensive, relatively speaking.
