My boyfriend and I are looking for a vacation that is beyond a beach, we love the warm weather, but love to have the option of adventure and lots of activities. We just got back from Costa Rica and loved it, we'd love to go back, but not sure of the weather in August? We are open to any ideas...here's what we like

Dislikes

resort areas
commercialized
Our budget is not too limited, don't want anything that will take too long to get there...we live in North Carolina.
Would love to go somewhere in Central or South America, but would consider Europe too.

You will get better response if you re-post on those boards (see the 'Change Forum' pull down menu) - Europe, Mexico & Central America, and South America.
You can visit London or India, this two place is great for travel.
I have not been to Portugal, but some friends went there recently and loved it - AND - they said it was amazingly cheap for Europe. It is on my list of places to go now too
It seems to fit your criteria - warm, coastal, not densely populated, not heavily touristed.

August is not great for most parts of Mexico or Central America because it's hot humid and rainy season.
Try Sicily in August. Fly into Palermo and just about 10 miles south you can find the beach town of Terrasini. If you go there be sure to spend a few nights at the Bird Pub. Very cool place for locals.
From there take a short boat ride to the island of Favignana.
