Single, spring celebration travel for an adventurous woman

I'm looking for someplace warm, low key, where an english speaker can chill, kayak, hike, sail, maybe bicycle, eat some great food, experience natural beauty, wander about safely. Not interested in 5 star hotels, most likely traveling solo. Been to Hawaii, Curacao, other Caribbean locations...looking for something new and interesting for a week. Thoughts?
