Where to Over Christmas Holiday with Family

We're looking for ideas on where to go with our high school senior plus a 10 and a 11 year old during the last 2 weeks of the year. Since it might be the last time we take a family vacation with him, we let him pick the destination. He wants to go someplace warm with beaches, snorkeling, fishing, and outdoor activities. His ideas are Australia and the southern carribbean, maybe Hawaii. I don't know the reasons, but he does not want to go to Puerto Rico or Mexico.
Everybody in the family travels well and we avoid resorts and tours. Our last winter vacation was to Costa Rica where we rented houses.
Any ideas are welcome so we can start making reservations.
