My boyfriend and I are planning a road trip to Eastern/Atlantic Canada from SW Ontario for next summer. Since we will be driving through Quebec on the way out to the Maritimes, I thought it would be nice to drive through New England on the way back home. We will probably have a maximum of 5 days to get from New Brunswick back to Ontario. I haven't done much research about this aspect of our trip yet, so any advice is welcome!

Maybe just head to Bar Harbor ME for 2 nights. Then drive thru NH's White Mountains over to VT and straight to Canada. The Kancamagus route would be the most scenic thru the mountains but would take longer.
You don't say how long you have for the New England part of the trip, but here is a possibility:
St John, NB to
Bar Harbor, ME to
Rockland, ME to
Bethel, ME to
Pinkham Notch, NH to (Mount Washington)
Conway, NH to
Woodstock, NH via Kancamagus Highway to
Montpelier, VT to
Burlington, VT
If you plot these out on Google maps or even a paper map, you will see that there is a good combination of mountain and coastal driving and it avoids large cities, though North Conway is a mess as it is full of outlet stores, though this may be a feature rather than a bug.
From Burlington, you can go to New York State on the ferry and eventually return to Ontario at Kingston, or you could go north on I-89 and go through Quebec.
