I will be flying into Newark and travel to South Jersey (with a rental car) for work for 2 weeks. I also have a meeting in Manhattan on the Sunday between the weeks. My company most likely will put me in a hotel in South Jersey throughout the 2 weeks, so I will have to head to Manhattan Sunday morning and head back to South Jersey Sunday evening.
So, I am trying to figure out the best (and a cheap?) way to do that... I have that rental car, but I am a bit reluctant to drive into the Manhattan and try to find parking (and based on what I heard, a full day parking on Sunday isn't cheap either). Is there any kinds of Park n' Ride (i.e. park the rental car outside Manhattan and then take public transit in)?
Please advise. Thanks

The MetroPark New Jersey Transit station in Iselin, New Jersey has a large parking facility and is often used by people traveling from further south.
Exactly where in "South Jersey" are you going to be working?
The Hamilton station may be convenient for you, depending on where you are staying in South Jersey. In addition to the lots (usually used by monthly pass-holders), there's a parking deck; cost is less than $10 for the day.

You should be aware that NJ Transit experienced extensive damage during Hurricane Sandy. While the trains are running, its is not necessarily full service, especially on a Sunday.
You should look at the NJ Transit website.
If you have to drive to NYC, you can park in a garage and the website bestparking.com has listings all over the city and you can get discounted parking. Avoid locations in lower Manhattan that were effected by Hurricane Sandy. plenty of downtown buildings have not reopened. All parking meters (muni meters) are free on Sundays in NYC.
Maybe not our business, but unless the meeting in NYC is not forco. business, I dont get why it has to be cheap. But to answer your question, in addition to train service, there's also widespread bus service in and out of Manhattan from NJ.

I think a lot of this depends on where you are going to be in South Jersey. But where you need to be on Manhattan is also relevant. Parking will be relatively easy to find if you do decide to drive. Tunnel tolls are expensive as well. But driving could be your best option. This is a $50 trip, not $150 after all. But if you are hesitant to drive in Manhattan I certainly understand. PATH service (the "subway" into NJ) is currently not running fully on the next couple of weekends, but by Christmas it will be back on again. I think the warnings about post-Sandy problems are a little overblown. NJ Transit service is running except into Hoboken, even on weekends. The trick is finding a station where you can park, as others have pointed out.
