I don't know any specific Veg restaurants (have eaten in a few of the nearby hotel restaurants and some have decent menus). But in case no one has recommendations . . . SeaTac has lots of food options and several have vegetarian dishes

I also recommend to eat at the airport in the Food Court. It's a really nice one with many good restaurants from Seattle represented. I'm sure the Thai and Mexican places for sure would have some vegetarian options.
There's nothing really nearby outside the airport that is practical to get to without having a car (you're in a pretty much commercial/industrial area).
This restaurant, with a location in the airport, claims to offer vegetarian fare: http://www.qdoba.com/
