Family of 12 looking to go "out west" last week of August, 1st week of Sept. We have no idea where to start...but we would like:
To be in the mountains, have access to pool, lake, river, fishing, nature, hiking and HORSES.
Luxury accomodations are a must. We are also looking for separate units, not all 12 in one room...separate by three families probably.
Anything near a national park would be fun too...
thanks for help narrowing this down for me!

You might look at a "Dude Ranch".
C Lazy U is near Rocky Mountain Park

There's also a bunch in Jackson Hole next to Grant Tetons National Park

For California, there's a beautiful location near Yosemite in Bridgeport, CA

I agree. A dud ranch would be perfect. You are all together at meals, yet can have separate cabins or rooms and can usually choose between many different activities each day.
Checkout http://www.ranchweb.com/
Their reviews are very accurate, in my experience. There is a column with search features (type of ranch, budget,, location) that will help you narrow down the choices.
Our favorites over the years were Cherokee Park in Northern Colorado and the Flying U in British Columbia (not upscale, but very nice riding)
JACKSON WYOMING is going to be your best choice
Idaho Rocky Mountain Ranch
Paws Up (Montana)
Triple Creek Ranch (Montana)
Smith Fork Ranch (Colorado)
Jenny Lake Lodge (Wyoming)
chelisek: if that is your picture, you're very cute!
Luxury accommodations are hard to find in a guest ranch, but try Devil's Thumb Ranch. It is very chic cowboy decor, great service, gorgeous location, HORSES, and everything else you want. The Ranch House restaurant there is outstanding. So is Heck's Tavern. It is a wonderful place. Plus, it is all based on green technology.
Forgot to say, Devil's Thumb Ranch is near Winter Park, Colorado. If you wanted to, you could drive into Rocky Mountain National Park one-day, over Trail Ridge road.
I think that Dunton Hot Springs in SW Colorado and has everything you want, and close to Mesa Verde National Park:

Park City, UT is a great place, in southern Utah you get your Zions National Park and Moab is in between. Just went to Jackson Hole last weekend which was fun, lots of outdoors activities, lot of driving, but near Tetons and Yellowstone. If you have that many people I would suggest renting a condo or townhome through a place like VacationRoost. You can find great places that sleeps many people for great prices. http://www.vacationroost.com/destinations
