The dramatic structures that make up the International Finance Centre complex, dominated by IFC One, Hong Kong's tallest skyscraper, have become a hotbed of ambitious new restaurants -- almost all of which have harbor views. This Cantonese restaurant is one of the best, already gaining praise for its traditional menu albeit with some nouvelle liberties such as sautéed sea whelk sliced into the shape of a flower and balanced above four cherry tomatoes au gratin. Other winners are chicken baked with rock salt in an age-old method, and deep-fried crispy duck breast stuffed with minced chicken and crabmeat.
