Care to spend an evening along the ancient Silk Road? Water Margin, a beautiful, immensely popular restaurant done up in dark wood, stone, and red hanging lanterns -- is as close as you'll get to it in Hong Kong. The meal begins with kimchee -- the north of China is close to Korea -- and continues with daring preparations of pig's throat, jellyfish, and braised lotus root. Steamed scallops in pumpkin puree would be a great winter dish if only Hong Kong had winter.
