The chef, decamped from Melbourne, prides himself on an ever-changing Asia-meets-Mediterranean-inspired Mod-Oz menu. Dishes have a cutting-edge, flavorful twist, with seafood center stage: fresh-shucked Pacific oysters and roasted Hervey Bay scallops, wok-fried mud crab (A$70), line-caught reef fish and baby barramundi. You'll also find prime Victorian lamb and alpine goat, cardamom roast chicken, duck curry, and interesting vegetarian options on the menu—try the millionaires' salad of shaved palm hearts, baby herbs, and chilli—as well as decadent, tropically inspired desserts.
