New Zealand's most celebrated chef and fusion cuisine pioneer, Peter Gordon, opened this signature restaurant -- his first in the country since the 1980s -- in 2005, in the city's newest major hotel. He oversees the restaurant from London, where he runs The Providores, and visits regularly. As you would expect from a chef of his standing, the refined food delights with surprises such as the wasabi-tobiko (flying-fish roe)-spiked avocado cream served with the truffled yellowfin tuna, or the roast five-spice pork belly and rum-roast pineapple that accompanies sautéed scallops. Classic melds with modern: leather banquettes line the white walls, where enormous mirrors reflect the large ring-shape lights hanging from the high ceilings. This is a place to feel special.
