If you sit all day on a stool at this pink-, green-, and yellow-stripe roadside gazebo, nursing beers and nibbling on conch, you'll become a veritable expert on Long Island and the life of its residents. Such is the draw of this laid-back watering hole, open 9 to 9 daily -- sometimes later when the bar is hopping. Have a chat with Max while sampling his conch salad ($3.50 or $6), conch dumplings (six for $1), or daily specials like baked ham and steamed pork.
