Eileen Forrester, wife of the Anglican archdeacon of Trinidad and Tobago, supervises a kitchen full of good cooks who boil and bottle the condiments sold here and pack them in little straw baskets—or even in bamboo. Most of the jars of tamarind chutney, lemon and lime marmalade, hot sauce, and guava and golden-apple jelly are small, easy to carry, and inexpensive.
