Owner Porter Williams serves potent alcoholic creations like "The Wolf" and other creatures, as well as fairly sophisticated local and international cuisine. Look for steamed, freshly caught snapper served in a pepper wine sauce with peas and rice or spicy-hot chicken curry served with a tangy range of chutneys. The airy, trellis-covered spot overlooks the salinas.

The folks at Island Thyme make great burgers, great pizza, and wonderful local specialties. They have the most extensive liquor selection on-island and a great wine list. They have a an impressive gallery of Haitian art for sale as well as beautiful gold and silver jewelry. If you stay on Salt Cay...be sure to eat at Island Thyme, hang out at Island Thyme, believe anything Porter says, buy whatever Porter tells you, and do the "Zoo". You'll be happy you did.
