noma. Located in an old waterfront warehouse relatively close to the new Opera House, this property has won raves and accolades since its opening day. Chef Rene Reszip and his innovative team marry the best Nordic ingredients (wild berries, mushrooms, local vegetables and herbs) with musk ox, game, Jutland marsh lamb, and Faroe Islands scallops. The seven-course tasting menu with complementary wines is a delight, and is served in an understated, minimalist-chic atmosphere on Royal Copenhagen china. An à la carte menu is also available. The marinated and fried pork tenderloin with parsnip and lingonberry sauce is a standout, as is the dessert of homemade hazelnut-and-vanilla ice cream with raisins marinated in aquavit. Service is knowledgable and attentive. This is one of the very few new Danish restaurants making gourmets everywhere take note of an inventive, quintessentially north-Atlantic inspired cuisine.
