Brasserie

La Maison de l'Aubrac. Run by a former rugby player with his own cattle farm, this convivial 24-hour brasserie specializes in beef from the Aubrac, a volcanic region of central France renowned for the quality of its livestock. Beefy rugby enthusiasts come here for the he-man slabs of meat -- from steak tartare enlivened with Espelette chili pepper to rump steak, faux-filet, entrecôte, and rib of beef -- and the regional specialties, such as aligot (cheesy mashed potatoes). If this all sounds too carnivorous, opt for one of the salads or fish dishes and remember that dessert here is only for the most determined eaters.
