KC stands for Casey, as in owner-chef John Casey, a larger-than-life character, who turned a medieval stone town house once associated with the Blake family—one of the families that founded Galway—into an ultramodern eatery. The hard-edge, minimalist interior, with sleek black walls, provides a strong contrast with the old stone building. Dishes range from traditional-style stuffed roast quail to fillet steak on a hot stone, or sole meunière, to a range of tapas ($) including crab claws, mussels, and mini duck spring rolls.
