A 17th-century farmhouse just a short walk from the town center and the spa wells has been converted into this small, friendly hotel. It's been in the hands of the Sheedy family since 1855. Proprietor John Sheedy, who was chef de cuisine at Ashford Castle until moving back home, makes creative use of local produce in contemporary French-Irish fare ($$-$$$), and has turned Sheedy's into a much-lauded gastronomic destination. The green-gray dining room with plain, candlelighted tables provides a suitably sophisticated background for John's unusual and confident cooking. Try his fresh prawn soup, or a starter of warm salad of roasted monkfish with smoked bacon, mushrooms, and champagne dressing. His menu also features classic dishes like slow-roasted crispy duck with potato stuffing and apple sauce. The guest rooms are spacious and well-designed, with hip touches like power showers and CD players. All have relaxing views of the surrounding hilly countryside.
