The setting is elegant, the food delicious, and the service ultra-attentive. Executive chef Fabio Baldassare (former sous-chef to La Pergola's legendary Heinz Beck) turns out beautiful Mediterranean dishes at this recent (2003) entry onto Rome's fine-dining scene. Pastas are flavored with a delicate hand (thin Roman broccoli ravioli in a truffle-scented sauce); secondi, such as sea bass with tomatoes and olives, taste of the sea and sun, while swordfish with cauliflower emulsion in a Beluga caviar and salsa all'arancia (orange sauce) balance earthy, salty, and tart tastes beautifully. Still, the portions on each course range from restrained to quibbling. Desserts, however, are exquisitely prepared and presented (if ever you were to order a variation on chocolate anywhere, order it here!). Homemade bread, assagini (little nibbles) and courteous service help ease the wait between courses, which seems longer when business is slow. The chef also runs the casual wine bar across the street where light bites and a few pastas and salads are served at reasonable prices.
