"The Alchemist" is an apt name, as the chef's transformations are magical. Try the fiore molle della Valnerina, baked saffron cheese, bacon, and zucchini – served only here. In summer, cold dishes to try are panzanella, a local vegetable salad mixed with bread, or the barley salad tossed with vegetables. The farro (spelt) soup made with Sagrantino wine is a local specialty. The desserts are delicious: all are made on the premises and not too sweet.
