Delft's classiest restaurant is also its best hidden: set a little outside town, it can easily be reached by cab. In a restored 18th-century building, this award winner actually began as a humble pancake house. It's now run by top chef Mario Ridder, who took over when the former chef moved to the Parkheuvel in Rotterdam. In fine weather, you can eat on a beautiful terrace overlooking the Schie River. Specialties of the house include delights such as roasted Barbary duck with caramelized pistachio, date purée, beetroot, and balsamic sauce.
