A genuine late-15th-century castle, once sheltering the bishops of Caithness, this hotel blends the quite old and the more modern. The lounge is a relaxing room of soft green and cream, and bedrooms wear pastel stripes and floral fabrics. It's clean and comfortable, with a friendly staff and satisfying, well-cooked Scottish food in the restaurant. Try the steak rolled in crushed peppercorns and wrapped in Parma ham.
