The cider-house experience is a must in the Basque Country. Cider al txotx (shot straight from the barrel), sausage stewed in apple cider, codfish omelets, txuletón de buey (beefsteaks), and Idiazabal cheese with quince jelly are the classic fare. Reserving a table is a good idea, especially on weekends.
