With splendid views of Ibiza's one and only mountain (1,567-foot Sa Talaiassa), this lovely late-19th-century manor house is surrounded by hills of olive trees, redolent of Tuscany, and privacy—the sort that draws people like Richard Gere and Claudia Schiffer—is key here: there's a monitored gate at the driveway, and the restaurant and spa are exclusively for guests. Airy, rustic rooms with wood-beam ceilings are gracefully furnished; bathrooms have Moroccan-style tiling.
