Huesca's top dining establishment makes inventive use of first-rate local ingredients ranging from wild mushrooms to wild boar, venison, and lamb. The glass-walled kitchen is as original as the cooking that emerges from it, and the wine list is strong in Somontanos, Huesca's own Denomination of Origin. Look for lomo de ternasco cocinado a baja temperatura con embutidos de Graos (veal cooked at low temperature with Graos sausage) or paticas de cordero deshuesados (boned lamb's trotters) for a taste of pure upper Aragón.
