Le Pérolles Review
On Fribourg's main street, this restaurant's severe lines are softened by art-filled walls and, in nice weather, the leafy vistas from the sun-dappled balcony. One bite here reveals why chef/owner Pierre-André Ayer has earned so much praise. In a summer incarnation, his menu showstoppers include local lake fish drizzled with herb and shallot butter, grilled beef filet accompanied by a fricassee of tomatoes and dates, and poached peaches with lavendar honey and raspberry sorbet for dessert.
