Famed Chicago chef Charlie Trotter is behind this restaurant in the One&Only Palmilla resort. Cylindrical aquariums separate the open kitchen from the dining room. An open-air bar has seating areas overlooking the rocky coast. Trotter's menu emphasizes vegetables -- salsify, wax beans, turnips -- and pairs short ribs with parsnips and beets or rabbit with a sweet chili sauce. There's an awesome chocolate soufflé for dessert. The menu changes daily.

Trotter's original institution in Chicago still sets the gold standard, especially in terms of service (although the service at C was still great!) But, I actually enjoyed the food here better! The fact that you can pick your dishes, even with the 4 or 6 course "degustation" menus has a lot to do with it - you can customize the courses to your tastes. My wife's choices, although fantastic, were not quite as exceptional (but then she was limited in options because she's pregnant.) Expect to pay almost the same prices as Trotter's in Chicago. A silver lining is that the portions are much better sized, so at least we left very full. Another added bonus is that you can go for a romantic and memorable walk around the One & Only Pamilla grounds, which is otherwise off-limits to non-guests.RATING: 4.4

Of all of the restaurants that we tried during our week - C - was absolutely the best. Extremely expensive, small portions but you don't leave hungry. The atmosphere (very modern, slick) and the service were both perfect. Should not be missed.RATING: 4.8

while splitting our honeymoon between Esperanza and Ventanas, we hit the One & Only fort dinner at C. It was the best food we had while visiting Cabo. Nive job guys!RATING: 4.8
