Chau Chow (or Chaozhou, in China) is the term for people from Shantou (formerly Swatow). They and their wonderful seafood cuisine -- served here -- migrated all over Southeast Asia and around the world, introducing other cultures to clams in black-bean sauce, steamed sea bass, or any dish with their famous ginger sauce. Your best bet is not to order from the menu per se but to look around at what others are eating and order that way. It's not as rude as it sounds since everyone else does it, too.
