Brian Knox, the charming, gregarious chef at the helm of this locals' favorite, is a devotee of the Slow Food philosophy. His love and appreciation of food is palpable; some of the finest, simplest, yet most sophisticated dishes in town come from the open kitchen in this tiny, one-room gem of a restaurant. The creamy plastered walls of the intimate dining room are hung with art from local artists, and the ramada-covered patio open in summer feels like dining at a chic friend's house. Diners enjoy dishes like the fabulously tangy Caesar salad, panfried oysters with bitter honey and a balsamic reduction, Tuscan bean soup with white-truffle oil, and braised organic New Mexico lamb with olives and summer squash. Brian can be spotted shopping around town for fresh, local ingredients, and the menu changes regularly based on his gastronomic discoveries. Save room for dessert; the silky panna cotta (Italian custard) may be the best on the continent. There's an extensive, reasonable wine list, too; ask the friendly staff for their current favorites.

    Aqua Santa Review

    The setting – restful. Under simple lights on a wooden deck. Too bad the parking lot is so “right there.” Nevertheless, a fun eclectic mix of chairs around an eclectic mix of tables, but white line to let me know I was someplace special. Bubbles by the glass – who doesn’t love that! The seared ahi on watercress with pesto – lovely. What was that special taste in the pesto? The quick taste of the white of the night – picpoul – fun. The scallops – fresh, pleasant, with the perfect sear, although perhaps a little overdone for my taste. A gift of panna cotta from my sweet waiter Whitney lasted merely a second! How smooth, how divine. Perfect with the raspberries. As others have said… The bread, amazing. The best part of the evening – Whitney – my waiter. A cutie. A gentleman with knowledge. A foodie, with a ready smile and liquid eyes. He helped me celebrate my 60th birthday without even knowing! Go to Aqua Santa. Go hungry. Go and try it all! Spend your money. It’s worth it! Lovely evening. Thank you.

    A terrible overpriced meal with awful service

    Our family had Thanksgiving dinner at Aqua Santa which receives rave reviews from the New York Times and others. There were a number of problems.

    First, our parents' entrees were dreadful. They had lamb, chicken, and seafood. Their desserts were awful too. A lemon tart was cloyingly sweet with no lemon tanginess.

    Second, when my mother-in-law called, she told them that two of us are vegetarian. They said it was no problem and that they love to cook for vegetarians.

    When we got there, there was no veggie option on the menu. My husband and I asked about something vegetarian. The waiter acted as if we were asking for the moon. He reluctantly said they might be able to put something together. We got plates of food that I would not serve at home. It looked like table scraps slopped together on a plate with no care or concern. The food had no flavor. On top of that, they had the nerve to charge $23.50 (the same price as the chicken) for the plate of slop.

    Third, when the bill came, the restaurant had added a gratuity. This was problematic for a couple of reasons. First, the menu did not state a policy of adding gratuities. Second, they added the gratuity onto the cost of the meal (including wine) and the tax. So, they were essentially adding a 24% gratuity. Of course, this was even more offensive because the food and service were so poor.

    When we asked them about the gratuity, they were belligerent and insisted that this was their policy. All in all, this was not a pleasant experience.

    The Chef loves himself

    Ate here. Too many tables - very crowded. Service excellent. Wine list esoteric and very expensive. Great bread. This restuarant has a rep that the Chef loves to mingle with his patrons. I watched him for two hours - I thought he had 10 dates that night, given the amount of time he spent schmooching the female diners.
